Inspection and unloading stages to guarantee optimal
temperature and security conditions

Ingredients that have been selected and processed through strict management are sealed in raw material containers and delivered to the logistics warehouse, where they are stored at optimal temperatures.
After the logistics company completes security checks, the truck and the factory are docked, ensuring there is no gap between them. The materials are then unloaded while maintaining the optimal temperature.
During the unloading process, the temperature of the materials is checked and inspected, and a quality inspection certificate is attached to ensure that they are stored in optimal condition."

The inspected ingredients are sorted by type, restaurant delivery date, and other relevant factors and stored safely and cleanly before being transferred to the restaurant. At this time, the optimal temperature condition is maintained to keep the ingredients fresh. After re-checking the expiration date and condition of the ingredients, the delivery vehicle is docked in the storage warehouse without any gaps, and the ingredients are loaded onto the car and depart for the destination restaurant. The VeroFresh program enables real-time checks of product and vehicle temperatures to minimize temperature deviations before delivery."

1Thorough ingredient management

Thorough ingredient management must continue from the farm to the distribution center and even to the restaurant. When the ingredients are delivered to the restaurant, McDonald's does its best to keep the ingredients fresh by following the manual.

When storing food in the refrigerator or freezer, it is crucial to maintain the correct temperature.

'McDonald's ensure that the necessary space is secured in advance so that the delivered ingredients can be moved directly to the refrigerator or freezer. Then, cover them with constant-temperature blankets and waterproof cloth to maintain the temperature of the ingredients. Lastly, use trays to keep them from touching the floor before placing them in the refrigerator or freezer. 

Check the freshness of food ingredients by inspecting the samples

When the ingredients are delivered, McDonald's opens a few boxes of each frozen or refrigerated ingredient to check if any of them fall below the standards. If any issues are found, we return them for disposal.

We use the products that were received first, and maintain the optimal temperature of our refrigerators/freezers.

Do you know the term “First-in, First-out?” At McDonald’s, ingredients are stored and managed in the order they are received, ensuring that the temperature is well maintained by spacing appropriate gaps between boxes.

McDonald's checks the temperature of the patties before serving the first product of each day to make sure they are at the right food temperature.

Applying acid values that are stricter than those of the Ministry of Food and Drug Safety

McDonald's measures the acid value of cooking oil every day and replaces it immediately if it exceeds the standard. We apply the acid value of 3.0, as set by the local Food Sanitation Act.

Daily monitoring and management of food safety issues

All restaurants thoroughly manage quality by regularly checking food safety, and a third-party inspection agency conducts inspections to ensure that McDonald's global restaurant food safety standards are consistently maintained.

3Food preparation management

McDonald's also takes every precaution to guarantee safety and hygiene during the cooking process.

  • Automatic cooking mode that cooks at the appropriate temperature depending on the type of patty

    The patties are automatically cooked using a device called a grill. When you press the auto cooking mode, the food is automatically cooked according to the set cooking time. When the set time is up, the top plate is automatically raised, and cooking is complete.

  • Using disposable gloves to prevent cross-contamination

    In order to prevent cross-contamination, wear blue gloves when handling uncooked food and white gloves when handling cooked food or utensils. Used gloves are immediately disposed of and replaced with new ones.

  • Crews preparing to provide clean and safe products

    In the restaurant kitchen, a hand-washing timer rings every 30 minutes. All staff working in the kitchen cleanse their hands from the palms to the forearms every 30 minutes. They also take great care of personal hygiene, such as wearing clean uniforms.

  • Wash cooking utensils every 4 hours

    To ensure hygienic cooking conditions, restaurant staff clean cooking utensils once every four hours.

4Efforts for customer satisfaction

McDonald's checks even the unseen areas to provide products made with sincerity.

  • "Made for You" system that makes food right after an order comes in

    'McDonald's does not prepare food in advance; instead, it uses the 'Made for You' system, which cooks food as soon as a customer orders it, providing only freshly cooked food.

  • Changes in product arrangement and content reflecting customer opinions

    In response to customer feedback that the shredded lettuce seemed insufficient after the switch for hygiene reasons, the amount of shredded lettuce in some menu items has been increased by 30g.

  • Always keep the space where customers order clean

    'McDonald's also keeps the counters and digital kiosk areas clean and well-maintained at all times, ensuring that customers can place their orders with ease and comfort.

  • Keeping the restaurant clean until the moment the customer leaves the restaurant

    'McDonald's continues to maintain not only the tables where customers eat but also the trash bins and restrooms, ensuring they remain clean.
